Carrot Hummus (Mii Amo)

500 grams Carrots (Roasted)
100 grams Tahini
2 each Lemon (juice)
2 each Lemon, zest
2 each Garlic (cloves)
100 grams Olive Oil
10 grams White Balsamic Vinegar
Urfa Biber Flakes (to taste)
Sea Salt (to taste)
Directions
Season the carrots with olive oil, salt and pepper and roast in a 350-degree oven until fork tender. Cool completely.
Combine the roasted carrots, tahini, lemon juice and zest, garlic, and white balsamic and purée until smooth in the food processor. With the motor running slowly add the olive oil.
