Air Fryer Chicken, Chorizo, Baby Potatoes, and Onions

Ingredients

600g miniature potatoes, halved and parboiled for 10 minutes, then dried

- 3 chicken breasts, cut into chunks

- 3 medium onions, chopped

- 3 chorizo sausages, chopped

- 2 bags microwave basmati rice, heated

- Olive oil spray

Directions

**Prepare the Potatoes:**

- Parboil the halved miniature potatoes for 10 minutes, then drain and dry them.

2. **Preheat the Air Fryer:**

- Preheat your air fryer to 200°C (400°F).

3. **Combine Ingredients:**

- In a large bowl, toss the chicken chunks, chopped onions, chorizo pieces, and parboiled potatoes with a couple of sprays of olive oil.

4. **Cook in the Air Fryer:**

- Divide the mixture between the two drawers of a Ninja Dual Air Fryer, ensuring everything is spread out evenly and not overcrowded.

- Air fry at 200°C (400°F) for 20 minutes, turning the ingredients every 3-4 minutes with wooden spoons to ensure even cooking.

5. **Check and Adjust:**

- Check the doneness at 20 minutes. The chicken should be fully cooked, and the chorizo nicely browned. If you prefer chorizo well done, be cautious not to overcook the chicken. Adjust cooking time as needed.

6. **Transform the Rice:**

- After cooking, remove the trays and carefully add the heated microwave basmati rice to the tray's residual oil from the chorizo. Mix well to coat the rice with the flavorful oil.

7. **Serve:**

- Serve the chicken, chorizo, potato, and onion mixture over the transformed rice.
