• 6 oz raw lean sirloin or flank steak
• 2 cups broccoli florets
• 1 teaspoon neutral oil (avocado or olive)
• 1 tablespoon low-sodium soy sauce
• 1 clove garlic, minced
• 1 teaspoon fresh ginger, minced (or ½ teaspoon ground ginger)
• 2 tablespoons water
Directions
1. Slice steak against the grain into strips ¼-inch thick.
2. Mince garlic and ginger.
3. Measure all ingredients before cooking.
1. Heat a 10-12 inch skillet over medium-high heat for 2 minutes.
2. Add 1 teaspoon oil and swirl to coat pan.
3. Add sliced beef in a single layer.
4. Cook 60-90 seconds, flip once, cook another 30-60 seconds until just browned.
5. Remove beef from pan and set aside.
6. Reduce heat to medium.
7. Add broccoli and 2 tablespoons water to the same pan.
8. Cover and steam for 3 minutes.
9. Remove lid and cook uncovered 1-2 minutes until broccoli is tender-crisp and water evaporates. 10. Add garlic and ginger; cook 15 seconds, stirring constantly. 11. Return beef to pan. 12. Add 1 tablespoon soy sauce. 13. Toss everything together for 1-2 minutes until beef is heated through. 14. Remove from heat and serve immediately.
