Ingredients

Cacio e Pepe gnocchi

Lemon

Spinach

Pancetta

Parmesan, Romano & Asiago cheeses (or freshly grated pecorino Romano cheese)

Directions

Heat a pan and add the pancetta, cook for 5-7 minutes. Remove from pan and set aside. Add 2 tbsp of water, and the gnocchi, cover and cook over high heat for 3 min. Remove the lid, stir, add in a few handfuls of spinach, lower the heat and cook for 3-4 minutes longer. Zest a lemon over the gnocchi and squeeze a little bit of the lemon over it. Add the pancetta to the gnocchi, stir to combine and top with black pepper and grated or shaved cheese and enjoy!
