Lentil Soup (from Recipe Card)

2 cups dry lentils
2-1/2 qts water
1-1/2 tsp salt
1/4 tsp pepper
1 bay leaf
2 whole cloves
dash cayenne pepper
1 ham bone
1/4 cup butter
1 large carrot chopped
1 large onion chopped
3/4 cup chopped celery
1 clove garlic minced
6 frankfurters
chopped parsley
Directions
Wash lentils
Place in a large kettle with water, salt, pepper, bay leaf, cloves and cayenne pepper.
Add ham bone
Bring to a boil, reduce heat to simmer
cook vegetables and garlic in butter for 10 minutes
add to lentils
Add franks and simmer gently for about 2 hours
remove franks and ham bone. Set aside
Discard bay leaf and cloves
strain soup with wire strainer
Cut meat from ham bone in to small pieces. Slice franks and add to soup.
Reheat soup, correct seasonings,
garnish with parsley
