Parmesan Tomato Cannellini Bean Soup

Ingredients

1 can (15 oz) cannellini beans, drained and rinsed

1 can (14 oz) diced tomatoes

1 onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Directions

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and sauté for an additional minute until fragrant.

Stir in the diced tomatoes, cannellini beans, vegetable broth, oregano, basil, and red pepper flakes. Bring to a simmer.

Cook for 15-20 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Stir in the grated Parmesan cheese until melted and well-combined.

Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
