Italian Pasta Salad

Ingredients

Pasta Salad

1 pound pasta of choice

8oz mozzarella, diced

6oz black olives, sliced

2 roasted red peppers, diced

8-12 peperoncini, sliced

1 small red onion, diced

Handful of fresh basil, torn

Freshly grated parm

Dressing

3/4 cup red wine vinegar

3/4 cup olive oil

1 tbsp dried basil

1 tbsp dried oregano

1/2 tsp red pepper flakes

1 tbsp honey

2 garlic cloves, grated

Freshly grated parm, as much as you want

Salt & pepper, to taste.

Bring a pot of salted water to a boil, and cook pasta according to package instructions. Then drain, and set aside to cool.

Directions

Add all the dressing ingredients to a base of a blender and blend until emulsified, then set aside.

Add the cooked pasta to a large bowl along with the remaining ingredients. Pour over the dressing and mix until combined. Transfer to the fridge until you’re ready to eat. It’s best if set aside in the fridge for a few hours to really chill.

Right before service, top with freshly grated parm.
