WALNUTS, ROUGHLY

CHOPPED > A SMALL HANDFUL OF DRIED

CRANBERRIES

> OLIVE OIL › LEMON JUICE > SALT AND BLACK PEPPER > CHILI FLAKES (OPTIONAL) > DRIED HERBS OR FRESH PARSLEY

DIRECTIONS

1. TOAST THE BREAD UNTIL GOLDEN AND CRISPY, EITHER IN A TOASTER OR IN A PAN WITH A LITTLE OLIVE OIL: TOAST THE RUSTIC BREAD (SOURDOUGH OR WHOLE GRAIN) UNTIL GOLDEN AND CRISPY, EITHER IN A TOASTER OR IN A PAN WITH OLIVE OIL.

2. MASH OR SLICE THE AVOCADO AND SEASON WITH LEMON JUICE, SALT, AND PEPPER: MASH OR SLICE THE RIPE AVOCADO AND SEASON WITH LEMON JUICE, SALT, AND BLACK PEPPER. SPREAD THE AVOCADO GENEROUSLY OVER THE TOASTED RUSTIC BREAD.

3. SLICE THE TOMATOES AND ARRANGE THEM ON TOP: SLICE THE CHERRY TOMATOES (RED AND YELLOW) AND ARRANGE THEM ON TOP OF THE AVOCADO- COVERED BREAD

4. CRUMBLE THE FETA OVER THE TOAST, THEN SPRINKLE WITH WALNUTS AND CRANBERRIES: CRUMBLE THE FETA CHEESE OVER THE TOAST, THEN SPRINKLE WITH ROUGHLY CHOPPED WALNUTS AND DRIED CRANBERRIES. FINISH WITH A DRIZZLE OF OLIVE OIL, DRIED HERBS OR FRESH PARSLEY OR FRESH THYME, BLACK PEPPER, AND CHILI FLAKES (IF USING).
