Old Fashioned Flavored Bacon

4.5 lb pork belly
45 grams of salt
5.6 grams of pink curing salt
1/4 cup brown sugar
1/4 cup cherry syrup
1/4 cup pendleton 1910 rye whiskey
Peel of 1 orange
Dash of orange bitters
Directions
Place the pork belly into a resealable bag or non reactive container. Mix up the cure with all other ingredients, and pour into the bag. Seal the bag and massage well to coat, then place into the fridge to cure for 8-10 days. Make sure to flip it once a day to distribute the mix evenly.
Smoke at 225°F for 2-3 hours or until internal temperature reaches 140°F. Let it cool before slicing into strips. Cook strips and enjoy.
