Sourdough Starter

2 cups lukewarm potato water
2 cups flour
1 T sugar
Directions
Cut up 2 medium sized potatoes, boil them in 3 cups water until tender. Strain potatoes and measure out 2 cups potato water. Add flour and sugar and mix into a smooth paste.
Set in a warm place until starter mixture rises to double. You are now ready to make your sourdough goodies. Be sure you save some for starter.

Early day cowboy recipe.
I understand this was a good way to start the sourdough starter on the prairies as they were a long ways from town or anyone who had starter or yeast.
