Southern Squash Dish

Yields: 6–8 servings
Ingredients:
– 3 yellow squash, sliced into rounds and rough chopped
– 3 zucchini, sliced into rounds and rough chopped
– 1 sweet yellow onion, diced
– 3 cloves garlic, minced
– 2 cups sharp cheddar cheese (such as Tillamook farm cut)
– 1 cup Parmesan or Reggiano cheese, divided
– 1 cup Duke’s mayonnaise
– 1 cup heavy cream
– 1 egg
– 1 tablespoon Better Than Bouillon (vegetable or roasted base)
– 1 cup crushed French’s fried onions
– Salt and black pepper, to taste
Directions
1. Preheat oven to 350°F.
2. In a large bowl, combine squash, zucchini, onion, and garlic.
3. In another bowl, whisk together cheddar, ½ cup Parmesan, mayonnaise, heavy cream, egg, Better Than Bouillon, salt, and pepper until smooth.
4. Pour cheese mixture over vegetables. Stir until well coated. Taste mixture and adjust seasoning with additional salt and pepper if needed.
5. Transfer mixture to a glass casserole dish. Bake at 350°F for 25 minutes.
6. Increase oven temperature to 425°F and bake another 20 minutes.
7. Remove from oven and top with remaining Parmesan and a light layer of crushed French’s fried onions (do not fully cover).
8. Return to oven and bake until onions are golden and cheese is bubbling.
9. Let rest 10 minutes before serving.
