Sweet Potato & Spinach Hash With Egg

Ingredients

1 large sweet potato, diced

1 onion, chopped

2 cups spinach (fresh or frozen)

2-3 eggs

Oil, salt, pepper

Directions

  1. Heat oil in a pan. Add diced sweet potato + onion; cook until softened and golden, stirring occasionally (10-12 mins)

  2. Add spinach; cook until wilted. Season

  3. In sauce pan (or seperate), fry eggs to your liking

  4. Plate hash, top with eggs
