Directions
Pound chicken into half-inch thickness.
Add flour, salt, and lemon pepper to a shallow bowl. Mix until well combined. In a separate whisk the eggs with a splash of milk and lemon juice.
Heat your pan with oil over medium heat. Coat the chicken in the flour then egg mixture and pan fry until golden.
You may need to cook the chicken in several batches. Keep the cooked chicken warm in a preheating oven.
Turn your pan to low. Using the same oil you fried the chicken in, create a rue by adding in some of the seasoned flour you used to coat the chicken. Whisk until thick. Add lemon juice and chicken stock or bullion until you reach a gravy-like consistency.
Pour the gravy over the chicken in the oven and cover in lemon slices. Cook for 15 minutes at 375 degrees.
