Miso Black Cod. Just Remember the Ratio

Ingredients

680-720g black cod

200g white miso

100g/ml sake

100g/ml mirin

50g sugar

100-200g sake to rinse cod

Directions

combine marinade, heat on low until consistency shown, let cool

rinse cod in sake (removes fishy smell)

combine marinade w/ cod, make sure every piece is covered

marinate for 1-3 days (longer better, I did 3)

wipe excess marinade and place on baking sheet

broil on high (I use second highest rack) until cod gets some color (usually takes 7-10 min)

(optional) torch for additional color
