One-Pot Creamy Garlic Chicken & Rice

Ingredients

1 tbsp. olive oil

500 g chicken breast

300 g brown rice

2 tbsp. mixed herbs

3 garlic cloves

1 lemon

750 ml chicken stock

200 g green beans

200 g low-fat Greek yoghurt

250 g spinach

Handul fresh parsley

Directions

  1. Heat the olive oil in a large pan over a medium heat. Add the chicken and fry until it’s fully cooked.

  2. Add the brown rice, mixed herbs, garlic and lemon zest. Stir well, and season with salt and black pepper to taste.

  3. Pour in the chicken stock, mix thoroughly, and cover the pan with a lid. Leave it to simmer for 15 minutes.

  5. Stir in the Greek yoghurt and add the spinach. Cook for a few minutes until the spinach has wilted.

  6. Finally, sprinkle with fresh parsley. Serve immediately or portion into containers for meal prep.
