Roasted Garlic and Parmesan Chicken

Ingredients

1/2 of a package of chicken thighs (about 4-5)

1/2 of a package of chicken tenders (about 5-6)

2 tbsp olive oil (for coating chicken)

3 tbsp Parmesan cheese

2 tbsp lemon juice

1 tbsp lemon zest

1 tsp salt

1 tsp black pepper

2 tbsp paprika

2 tbsp garlic powder

1 tbsp Italian seasoning

2 tbsp freshly chopped parsley

3 tbsp salted butter (for the pan)

2 tbsp olive oil (for the pan)

Roasted garlic:

2 garlic bulbs

Drizzle olive oil

Salt to taste

Pepper to taste

Sprinkle of Italian seasoning

Garlic butter topping:

1/2 cup salted butter (1 stick)

1 tbsp olive oil

2 tbsp chopped parsley

2 tbsp Parmesan cheese

How to:

Directions

Preheat oven to 400 degrees. Cut off the top of the two garlic bulbs and place on tinfoil. Sprinkle with olive oil, salt, pepper, and Italian seasoning. Wrapped tinfoil around it and place in the oven for 45 minutes. While that’s cooking make the chicken below:

Season chicken in a large bowl with olive oil, parmesan cheese, lemon juice, lemon zest, salt, pepper, paprika, garlic powder, Italian seasoning, and freshly chopped parsley. Mix well. Add olive oil and butter in a large pan. Add chicken and cook on high heat until it’s browning. Halfway through cooking take chicken off the heat and chop into bite sized pieces. Add chicken back Into the pan and cook on medium to high heat until cooked through.

Take off the heat.

For the garlic butter: add salted butter to a bowl and microwave for 15 seconds until it’s softened but not melted. Add in olive oil, parsley, Parmesan cheese, and roasted garlic. Mix until well combined. Drizzle over chicken and serve!
