Salmon Orzo

Ingredients

You’ll Need:

2 salmon filets

1 onion, chopped

1 cup orzo

minced garlic

2 cups chicken broth

1/4 cup milk

salt & pepper, to taste

Parmesan cheese

1/4 cup nutritional yeast

spinach, chopped

You’ll Need To Do:

Season your salmon filets with your preferred seasonings.

Directions

In a pan over medium high heat, add some olive oil. Once oil is warm, add your salmon filets.

Cook your salmon 4 minutes, each side. Set aside once done.

In the same pan, add your onion and minced garlic. Cook until onions are soft.

Add orzo, broth, and milk. Mix together.

Turn heat to high and get boiling. Once boiling, cover and reduce heat to simmer. Allow to cook for about 12-15 minutes.

In the last 5 minutes of cooking, add your Parmesan cheese, nutritional yeast, and spinach. Mix together.

Add your salmon back on top. Cover and finish your cook time.

Ensure that your salmon is cooked to at least 145F.
