5-6 medium tomatoes
1 medium or large onion
3-4 eggs
2-3 cloves garlic
Chopped ginger (as desired)
Seasoning:
Salt to taste
1/2 tbsp sugar
1 tbsp ketchup (as desired)
Ground white pepper to taste
Directions
1- Cut tomatoes into wedges or quaters. Cut onions into wedges. Beat eggs until even.
2- In an medium or large pan, stir-fry the eggs until 80% cooked (slightly runny). Set aside.
3- In the same pan, stir-fry onions, garlic, and ginger until slightly fragrant. Season with salt.
4- Add in tomatoes. Season with the rest of the seasonings. Cook until tomatoes have soften.
5- Add eggs from step 2 and mix well.
6- (Optional) Add corn starch slurry to make a thicker sauce.
