Slow Cooker Vegetable Soup

Ingredients

1 Ig onion, diced

3 stalks celery, chopped

2 carrots, peeled & chopped

3 med Yukon gold potatoes, peeled & diced into small pieces

2 cans of fire roasted tomatoes (14.5 oz)

1 bag frozen mixed vegetables (12 oz)

2 bay leaves

1/2 tsp dried thyme

2 tsp minced garlic

1 tsp salt

1 tsp pepper

2 tsp Italian seasoning

8 cup vegetable stock

Directions

Place everything in slow cooker. Cook on low for 6 hours (until potatoes are soft)
