700 g waxy potatoes
Pinch of smoked paprika
Pinch of salt & pepper
Fresh parsley
Oil for frying
For the sauce:
3 tbsp sunflower oil
2 tsp smoked paprika
200 ml vegetable stock
1 tbsp tomato paste
1 clove garlic
1 shallot
3 tsp cornstarch
Cayenne pepper to taste
Directions
Cut the potatoes (skin on if you like) into cubes of about 3 x 3 cm.
Boil for 7 minutes, drain, and let dry.
Fry in oil until golden and crispy. Season with salt, pepper, and smoked paprika.
Sauce: sauté the finely chopped shallot and garlic in oil. Add tomato paste, smoked paprika, and cayenne.
Pour in the stock and let simmer for 5 minutes.
Mix cornstarch with a little cold water, stir into the sauce until it thickens.
Serve the potatoes with the sauce and garnish with fresh parsley.
