Strawberry Cheesecake Overnight Oats

Strawberry Topping

1 1/2 cups frozen strawberries

1/2 lemon

2 tb maple syrup

Overnight Oats

1 1/2 cups rolled oats

1/4 cup peanut butter

1/3 cup vanilla protein powder

1 cup plain greek yogurt (divided)

1/4 cup maple syrup

1/2 tsp almond extract (optional)

2 tsp vanilla extract

1 1/2 cups almond milk or milk of choice

Directions

First, prepare the strawberry topping. Add the frozen strawberries into a saucepan over medium heat, along with the lemon juice and maple syrup. Cook until the strawberries are completely broken down, then mash. Remove from heat to cool and set aside. Meanwhile, mix together the rolled oats, peanut butter, protein powder, half of the yogurt, maple syrup, almond extract (if using), vanilla extract, and milk in a bowl until well combined. Divide oats between 4 containers, then add a spoonful of remaining yogurt to each jar, followed by the strawberry topping. Cover and refrigerate at least 4 hours or overnight. ENJOY!
