Mediterranean Inspired Flatbreads! a Quick and Delicious Lun

Ingredients

2-3 flatbreads of choice

1 cup shredded mozzarella

Hummus

4 ounce feta cheese, crumbled

Arugula

Chickpea Mixture :

1, 15 ounce can chickpeas, drained and rinsed

1 cup cherry tomatoes, diced

1/3 cup sliced peperoncini

1/4 purple onion, diced

1 bell pepper, diced

Dressing:

1/4 cup olive oil

1 tsp garlic powder

1 tbsp hot sauce

1 tsp oregano

1 tbsp juice from the peperoncini

Directions

preheat your oven to 400F

In a bowl, mix together the chickpea salad ingredients. The in a small bowl, whisk together the dressing ingredients. Add the dressing to the salad.

Line a baking sheet with parchment paper and add the flatbreads

Spread a thin layer of hummus over the flatbreads then add the mozzarella cheese

Add the chickpea mixture on top

Bake in the oven for 6-8 minutes, until the cheese is melted and the chickpeas start to get a little crispy

Remove from the oven then add on arugula and feta, optional to add some balsamic glaze as well!
