Ann's Firecracker Prawns

Ingredients

Prep Time: 15 minutes

Cook Time: 3–5 minutes

Yields: 4 servings

Ingredients:

– 2 lbs jumbo shrimp, legs removed, de-veined, and butterflied

– 1/4 cup butter, softened

– 1/4 cup olive oil

– 1/4 cup chopped cilantro

– 1/4 cup chopped red pepper (use red chili for more heat)

– 3 tablespoons finely chopped garlic

– 1 tablespoon lime juice

– Sea salt, to taste

– Cayenne pepper (optional), to taste

Directions

1. Preheat oven to broil at 450°F. Adjust oven rack to the closest position to the heating element.

2. In a bowl, mix softened butter, olive oil, cilantro, red pepper, garlic, and lime juice.

3. Arrange shrimp in a single layer on an oven-proof dish.

4. Spoon the butter mixture evenly over each prawn.

5. Place under the broiler and cook for 3–5 minutes, turning the dish once or twice for even cooking.

6. Sprinkle with sea salt and cayenne pepper (if using) before serving.
