Spicy Cumin Lamb Noodles

- one pack of noodles, 250g 
Lamb marinade:
- 200g lamb mince 
- 1 shallot, minced 
- 2 garlic cloves, minced 
- 1 stalk spring onions, sliced thinly 
- 1 tsp minced ginger 
- 1 tbsp chopped coriander 
- 1 birds eye chillies 
- pinch of salt 
- 1 tsp pepper 
- 1 heaped tbsp cumin 
- 1 tsp ground coriander 
- 1 tsp msg 
- 1 tsp chilli powder 
- 1 tbsp soy sauce 
- 1 tbsp sugar 
Spring onion oil
- 4 spring onions 
- neutral oil 
To serve:
- 1 garlic clove 
- chilli flakes 
- 1 tbsp soy sauce 
- Chinese vinegar 
- Fresh coriander 
- Spring onion 
Directions
- Combine all lambingredients together to marinade lamb 
- Fry lamb mince until crispy & brown 
- Boil your noodles for approx 7/8 mins 
- Make some spring onion oil, I used 4 stalks and enough oil to cover surface 
- Per serving add on ‘to serve’ ingredients 
- pour the hot oil over these when played up 
- Garnish with crispy shallot, fresh chopped coriander, spring onion oil & fresh chillies
