Ginger & Turmeric Baked Cod Recipe

Ingredients

2 Atlantic cod portions

1 teaspoon ground turmeric

1 Tablespoon freshly grated ginger

2 garlic cloves, minced

olive oil

salt and pepper

2-4 fresh mint leaves, chopped

Directions

Preheat oven to 400ºF

Pat fish dry and season with salt and pepper.

In a small bowl mix together turmeric, ginger, garlic, salt, and pepper. Drizzle 1 Tablespoon olive oil over fish on all sides, then spoon the seasoning mix over the top of the fish.

Line a baking tray with foil and lightly oil. Place fish on tray and bake 5 minutes.

Turn the broiler to low and place tray under the broiler, making sure to watch while cooking. Broil on low for an additional 3-5 minutes or until fish is cooked through and flakes easily with a fork, and top is golden brown.

Drizzle with olive oil and top with mint before serving.
