½ ts salt

¼ teaspoon black pepper

1 teaspoon ground coriander

½ teaspoon onion powder

½ teaspoon oregano

1 ½ lbs boneless skinless chicken thighs

3 tablespoon olive oil divided

2 cloves garlic

Juice of ½ a medium lemon about 1 tbsp

2 red bell peppers thinly sliced

3 cups cauliflower florets finely chopped

1 medium red onion thinly sliced

Toppings for serving:

1 cup dry rice cooked according to package instructions
