Jay's Delicioso Pork Green Chili

#1 Spices:
1 tsp Sea salt
1 tsp Black pepper
1 tsp Curry
2 tsp Cumin
#2 Spices:
1 Tbsp Green Chili powder
1/2 Tbsp Mexican (or reg) Oregano
Ingredients:
1.5lb Pork Loin
2 Anaheim chilis
2 Poblano chilis
1/2 yellow onion
5 Tomatillos
1 mexican beer
3 1/2 C Chicken stock
7 garlic cloves
9 Tbsp Flour
1 Lime
8oz Hatch medium enchilada sauce
8oz World Table roasted mild salsa verde
3 Tbsp brown sugar

Directions
Trim pork & cut into small/med bite size pieces. Coat pork in #1 spices in plastic bag and refrigerate for several hours or overnight.
Cut 1/2 - 3/4 yellow onion and 5 tomatillos (cut thick but small). Chop 7 garlic cloves. Grill Poblano & Anaheim chilies until skin is BLACKENED! Steam in bag with a little water for 30mins, remove skins and seeds. Chop chilies.
In "hot" Dutch oven, quickly sear pork on each side in avocado oil & remove.
Deglaze pan with 1 mexican beer then slowly whisk in 9 Tsp (1 1/4 c if doubling) flour to create a rue. Add chicken stock. Bring to a boil then simmer. Whisk in #2 spices.
In a separate pan flash fry onions & garlic & add to pot. Then flash fry tomatillos & add to pot
Add the chopped chilis, 1/2 can enchilada sauce and 1/4 bottle salsa verde. Squeeze 1 fresh lime and brown sugar. Cook on low 3-4 hours. Serve with warm tortillas and garnish with cilantro.
