Vodka Chicken Parm Sandwich with Garlic Bread Baguette

Directions
In a skillet mix 2 tbsp butter, 1 diced shallot, and 3 cloves minced garlic until fragrant (around 3 minutes)
Add 1/2 cup tomato paste and 1/2 tsp red pepper flakes and mix until all of the shallots are coated and the tomato paste begins to brown a little
Add 2 tbsp vodka and 1/2 cup heavy cream and mix until combined. Add 1/2 cup freshly grated Parmesan and mix. Add pasta water as desired to thin out your sauce!
Garlic Bread:
to make your garlic butter, cut fresh garlic (as seen in video), too with olive oil and salt and roast in the oven at 400 for 1 hour
Mix in a bowl 3 cloves roasted garlic, 1 stick softened butter, 1 tbsp Italian seasoning, 1/4 tsp red pepper flakes, 1/4 tsp salt, 2 tbsp grated Parmesan, 1 tbsp chopped basil.
Cover 2 pieces of baguette bread with garlic butter and shredded Parmesan cheese and place in oven at 400 for 6 mins, and then broil on high for 2 mins
Sandwich:
to make the chicken cutlets, salt and pepper your breasts and then dredge your chicken cutlets in flour, then egg, then Italian bread crumbs. Repeat dredging in egg and Italian bread crumbs once more for a crunchier cutlet. Make sure to slice your chicken breasts thinner so they aren’t too big
Place the chicken cutlets in a skillet of hot oil and fry on both sides for ~5 minutes each side or until golden brown— cover your chicken cutlet in vodka sauce and fresh mozz slices and place in oven for 6 minutes at 400
Build your sandwich: layer your garlic bread with pesto, chicken cutlet, more vodka sauce, Parmesan, and basil!
