Ingredients

1 Tbsp of Oil

2 Bell Peppers

2 Onions

Garlic

1lb of Ground Beef

14oz Canned Diced Tomatoes

4oz Green Chiles

Taco Seasoning

Salt

2 cups of Rice

1 1/3 cups of Cheese

Fresh Parsley

Directions

1. Dice onions and peppers.

2. Add oil to a pan, then add the ground beef, onions, peppers, and garlic.

3. Stir fry on medium heat until cooked through.

4. Add in tomatoes, green chiles, and seasonings. Mix.

5. Add in rice and stir until incorporated.

6. Top with cheese and cover. Let heat until the cheese has melted.

7. Top with fresh parsley (optional).

8. Serve!
