French Onion Braised Chuck Roast

one chuck roast (3-5 Ibs, cut into pieces so it can fit into your Dutch oven)
one tbsp beef tallow
1/2 cup flour
one tbsp butter
four to five sweet onions
three cloves of garlic
sea salt to taste
freshly cracked pepper
two cups beef bone broth
one cup dry white wine (or sub more bone broth)
one tbsp Worcestershire sauce
one tbsp Dijon mustard
Directions
preheat oven to 325°F
start by generously salting chuck roast on all sides and dusting with flour. i like to cut mine up into smaller pieces so they braise more evenly
heat a Dutch oven over medium heat sear off chuck roast. once it’s browned on all sides, remove it from the pan and set aside
and add butter and onions to the Dutch oven. sautee until they're carmelized (about 40 minutes, stirring every five or so minutes)
deglaze the pan with wine and bone broth. add Worcestershire and Dijon
add chuck back into the pot, add more salt, thyme, and pepper
add the lid and braise in the oven for 3-4 hours or until the meat is falling apart
serve with mashed potatoes or some crusty bread and enjoy 🤤
