Sweet Potato & Black Bean Bowl with Lime Cream

Ingredients

2 medium sweet potatoes, peeled and cubed

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp ground cumin

Salt and black pepper to taste

1 can (15 oz) black beans, drained and rinsed

2 cups cooked rice or quinoa

1/2 cup Greek yogurt or dairy-free yogurt

Zest and juice of 1 lime

1 small clove garlic, grated

Salt to taste

Fresh cilantro, chopped

Sliced avocado (optional)

Directions

Preheat oven to 400°F (200°C) and line a baking sheet. (5 minutes)

Toss sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread evenly on the baking sheet. (5 minutes)

Roast until tender and caramelized, flipping halfway through. (25–30 minutes)

Warm black beans in a small saucepan over medium heat. (5 minutes)

In a bowl, whisk yogurt, lime zest, lime juice, garlic, and salt until smooth. (3 minutes)

Divide rice or quinoa between bowls. (3 minutes)

Top with roasted sweet potatoes and black beans. (3 minutes)

Drizzle with lime cream and finish with cilantro and avocado 😋🌱 (2 minutes)
