2 cups cooked chicken (shredded or chopped)
½ chopped apple (skin-on (~ 3/4 cup)
1 small red or orange bell pepper (diced (~3/4 cup)
¼ cup red onion (diced)
¼ cup toasted pecans (chopped)
⅓ cup light mayo
⅓ cup nonfat plain Greek yogurt or light sour cream
2 tsp fresh lemon juice or Dijon mustard
1 Tbsp minced dill
¼ tsp salt
Ground black pepper to taste
Directions
Add all ingredients to a large mixing bowl and blend until creamy.
Season with salt and pepper to taste.
Serve on whole grain crackers, toast or on apple slices for a low carb bite.
