Beef Steak Pizzaola Style

4 150-200g scotch fillet
1 tbsp olive oil
1 clove garlic
1 small bunch italian parsely
400g tin chopped tomatoes
1 tsp dried oregano
2 chicken stock cube
salt
black pepper
Directions
Remove plastic wrap from steak and flatten lightly.
(Wash), dry and roughly chop the parsley.
Peel and finely dice the garlic. Combine with parsley.
Open the can of tomatoes.
Add crumbled chicken stock, oregano, salt and little black pepper to tomato.
Warm up pan (very hot) with olive oil, and then place the 4 steaks into the pan.
Sear for about 1 minute, and then turn over.
Then spread half of the parsley/garlic mixture over the steak, and turn over again.
Spread the rest of the parsley/ garlic over steak and turn over again.
Then pour the prepared tomatoes over the steak, cover with a lid, and simmer for about 15 minutes.
