Ingredients

2 Tbsp. butter

4 garlic cloves, grated with a microplane

2 Tbsp. all-purpose flour

2 cups half and half (not fat free)

Zest of 1 lemon, about 1 tsp.

2 Tbsp. fresh lemon juice

⅓ cup grated Parmesan cheese

1 Tbsp. finely chopped parsley

Kosher salt and fresh black pepper, to taste

Directions

Prepare Your Ingredients: Gather all your ingredients and ensure they are measured and ready to use. This will make the cooking process smooth and efficient.

Melt the Butter: In a medium-sized saucepan, melt the butter over medium heat. Be careful not to let it brown.

Add Garlic: Once the butter has melted, add the grated garlic. Sauté for about 1-2 minutes until fragrant, but not browned.Incorporate Flour: Sprinkle the flour over the garlic and butter mixture. Stir continuously for about 1 minute to create a roux. This will help thicken the sauce.

Add Half and Half: Gradually whisk in the half and half. Continue to whisk until the mixture is smooth and starts to thicken, about 3-5 minutes.

Flavor with Lemon: Add the lemon zest and fresh lemon juice to the sauce. Stir well to combine.

Add Parmesan: Stir in the grated Parmesan cheese. Continue to cook, stirring frequently, until the cheese has melted and the sauce is creamy.

Season: Add kosher salt and fresh black pepper to taste. Remember to taste as you go to avoid over-salting.Finish with Parsley: Stir in the finely chopped parsley for a burst of color and fresh flavor.
