Passover Rolls

Ingredients

2 large egg yolks

1 large egg

1 cup Greek yogurt

1 tbsp honey

1 tbsp lemon juice

1 tbsp extra virgin olive oil

3 cups almond flour

1/2 cup potato starch

1 tbsp Passover baking powder (yes it exists, yes it is kosher for Passover)

1/2 tsp kosher salt

1 egg to brush onto rolls before baking

Directions

Preheat oven to 375F.

Whisk together egg yolks, egg, greek yogurt, honey, lemon juice and oil.

Combine almond flour, potato starch, baking powder and salt.

Finally combine wet and dry ingredients.

Grease your hands and form into 8 balls.

Place balls on a parchment lined baking sheet. Poke a hole in the center.

Brush with egg.

Bake for 20-25 minutes.
