Low Cal, High Fiber Cookies

Ingredients

1/2 cup- whole wheat flour

1 cup- oatmeal flour

4 tsp- olive oil

3 tsp- hung curd/Greek Yogurt

2 tsp- honey

2 tbsp-sugar/Jaggery powder (more or less depending on your taste)

1/2 tsp- Baking soda

Roasted sesame seeds (optional)

Directions

Sieve oatmeal and whole wheat flour along with baking soda.

Add sesame seeds.

In a food processor, add olive oil, hung curd, sugar, and honey.

Add both flours to the processor.

Do you get a smooth ball of dough? We need semi-soft dough. If it feels dry, add 1 tbsp more of hung curd.

Keep aside wrapped in an aluminum foil for 30 minutes.

Roll out on a dusted surface or counter top.

Give desired shapes and patterns.

Preheat the oven or microwave convection at 180 degrees C for 10 minutes.

Place cookies at an even distance on a greased baking tray.

Bake for 15-16 minutes at 180 degrees C.

Take out the cookies on a cooling rack and store in an airtight container.
