Gano's Marsala Cream Sauce

Yields: About 2 cups
Ingredients:
– Onions, thinly sliced
– Salt and red pepper flakes, to taste
– Mushrooms, sliced
– Chopped garlic
– 1 to 2 cups Marsala wine
– 1 cup heavy cream
– Salt and pepper, to taste
– 1 tablespoon cornstarch
– 1 tablespoon water
– Chopped fresh tarragon
Directions
1. In a skillet, caramelize onions with salt and red pepper flakes over medium heat.
2. Add mushrooms and cook until tender.
3. Stir in chopped garlic and cook briefly until fragrant.
4. Pour in Marsala wine and reduce by at least half.
5. Add heavy cream and bring to a boil, then reduce to a simmer. Season with salt and pepper.
6. In a small bowl, whisk together cornstarch and water.
7. Bring sauce back to a boil and stir in the cornstarch mixture.
8. Add chopped tarragon and turn off the heat. Stir until the sauce thickens.
Note: Best served over proteins like chicken or pork.
