Cheesy Taco Potatoes

One pound lean ground beef
Four to six medium Russet potatoes
One packet (1 oz) taco seasoning
½ cup water
One cup shredded cheddar cheese
Optional toppings: sour cream, salsa, green onions, jalapeños
Directions
Bake or microwave potatoes until soft and fluffy inside.
In a skillet, brown ground beef. Drain excess fat.
Stir in taco seasoning and water, simmer until thickened.
Slice open potatoes, fluff with a fork, then pile on the beef.
Sprinkle cheese on top and let it melt.
