Stuffed Sweet Potato with Cottage Cheese & Black Beans

250 g sweet potato
1 small can (≥130 g drained) black beans
1 mini can (≥70 g) tomato paste
100 g cottage cheese
Salt and black pepper, to taste
½ tsp paprika powder
Directions
Wash the sweet potato and prick a few holes with a fork. Rub with a little salt and paprika powder.
Air-fry 200°C (390°F) for 15-18 minutes, turning halfway.
In a small pan, combine the drained black beans with tomato paste, salt, pepper, and a pinch of paprika. Heat for 3-4 minutes.
Slice open the cooked sweet potato. Fill with the warm bean-tomato mixture. Top generously with cottage cheese.
Enjoy warm straight from the air fryer/oven.
