Stuffed Sweet Potato with Cottage Cheese & Black Beans

Ingredients

  • 250 g sweet potato

  • 1 small can (≥130 g drained) black beans

  • 1 mini can (≥70 g) tomato paste

  • 100 g cottage cheese

  • Salt and black pepper, to taste

  • ½ tsp paprika powder

Directions

  1. Wash the sweet potato and prick a few holes with a fork. Rub with a little salt and paprika powder.

  2. Air-fry 200°C (390°F) for 15-18 minutes, turning halfway.

  3. In a small pan, combine the drained black beans with tomato paste, salt, pepper, and a pinch of paprika. Heat for 3-4 minutes.

  4. Slice open the cooked sweet potato. Fill with the warm bean-tomato mixture. Top generously with cottage cheese.

  5. Enjoy warm straight from the air fryer/oven.
