Jerk Sauce/Gravy

1 tablespoon Olive Oil
1 medium Onion diced
5 sprigs Thyme (stalks removed)
3/4 teaspoon Allspice
1 cup Pineapple Juice
1 teaspoon grated Ginger
1 teaspoon Dijon Mustard
1 cup Tomato Ketchup
3/4 cup Brown Sugar
3/4 cup Jerk Marinade
2 cups Chicken Stock
2 tablespoons of finely chopped Chives
1 tablespoon of Honey
Juice if half a Lemon
Directions
Sauté the Onion in Olive Oil until soft
Add Thyme, Allspice and Ginger then cook for 2 minutes
Add Pineapple Juice and bring to a boil
Add Ketchup, Brown Sugar, Jerk Marinade and Mustard
Add Chicken Stock bring to a boil and simmer for 25 minutes
Once reduced by 1/3rd add Sugar, Salt, Honey and Lemon juice
Blend
Finish with finely chopped Chives and serve
