Lamb koftas

600g Lamb Mince, Raw
1 Medium Red Onion
1/2 Cup Fresh Coriander
1 Tablespoon Ginger
2 Tablespoons Mint
1 Bunch Rocket
2 Teaspoons Cumin
2 Teaspoons Paprika
1 Medium Lemon Zest
125g Low Fat Greek Yoghurt
Directions
Place the mince, onion, cumin, paprika, coriander, lemon rind, ginger and 1 tablespoon of the mint in a large bowl. Mix with clean hands until well combined.
Shape into batons about 2 x 4cm and thread two onto each bamboo skewer. Place on a tray and cover with plastic wrap. Refrigerate for 30 minutes.
Preheat a grill on medium-high or a lightly greased barbecue flatplate over medium-high. Cook the kofta for 2-3 minutes each side or until cooked through.
Meanwhile, combine the yoghurt and remaining mint in a small bowl.
Divide the kofta and rocket among serving plates. Serve with the minted yoghurt and lemon wedges.
