Easy Sweet and Sour Chicken Recipe

1 pound boneless, skinless chicken breast (cut into bite-sized pieces)
5 tablespoons cornstarch (divided)
2 tablespoons vegetable oil
1 bell pepper (any color, chopped)
1 onion (chopped)
8 ounce can pineapple chunks (drained (reserve juice)
1/4 cup vinegar (white or apple cider)
1/4 cup ketchup
1/2 cup brown sugar
2 tablespoons soy sauce
1/2 cup water
Salt and pepper (to taste)
Green onions and sesame seeds (for garnish)
Directions
In a bowl, toss the chicken pieces with 4 tablespoons of cornstarch until they are well-coated. Season with a little salt and pepper.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
Add the chopped bell pepper and onion in the same skillet. Sauté for about 2-3 minutes until they start to soften.
Mix the reserved pineapple juice, vinegar, ketchup, brown sugar, and soy sauce in a separate bowl. Stir until well combined.
Add the sauce mixture to the skillet with the vegetables. Bring to a simmer.
Mix the remaining cornstarch together with the water and stir into the simmering sauce.
Return the cooked chicken to the skillet, along with the pineapple chunks. Stir everything together and cook for another 2-3 minutes, allowing the chicken to heat through and the sauce to thicken.
Season with salt and pepper to taste. Garnish with green onions and sesame seeds.
