Low Carb Egg Roll in a Bowl

Ingredients

1 lb ground chicken (you can use ground beef, pork or turkey too)

1 16 oz bag coleslaw mix

1 cup carrots, diced

1 cup mushrooms, diced

1/2 cup green onions, chopped

1/2 large cabbage head, thinly sliced

4 tbsp tamari or coconut aminos or soy sauce

2 tbsp sriracha

1 tbsp honey

1 tsp sesame oil

1 tsp minced ginger

1 tbsp minced garlic

1 tsp onion powder

1 tsp garlic powder

Pinch of salt & pepper

Green onion and sesame to top

Directions

In a large skillet, add 1 tbsp avocado oil and cook your ground chicken until golden brown.

Add your carrots, mushrooms, and green onions. Season with all of the seasonings and the tamari, sesame oil, sriracha, honey, minced ginger and garlic! Give it a good mix!

Add your sliced cabbage, mix lightly and allow this to cook down for 1-2 mins.

Top with green onions, sesame seeds and extra sriracha if you’d like!

I love pairing this with cauli rice, but you can eat it straight out of the pan too! 🙌🏼
