Greek Chicken Meatballs with Lemon Orzo

1 egg
2 tbsp olive oil
1 cup orzo
2 cups chicken broth
Zest of 1 lemon
Juice of 1 lemon
Fresh parsley, chopped (for garnish)
Directions
Preheat Oven: Preheat your oven to 400°F (200°C).
Mix Meatball Ingredients: In a bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, red onion, garlic, oregano, cumin, salt, pepper, and egg. Mix until well combined.
Form Meatballs: Shape the mixture into meatballs, about 1 inch in size.
Cook Meatballs: Heat olive oil in an oven-safe skillet over medium heat. Brown the meatballs on all sides, then transfer the skillet to the oven and bake for about 15 minutes or until cooked through.
