Greek Chicken Meatballs with Lemon Orzo

Ingredients

1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1 egg

2 tbsp olive oil

1 cup orzo

2 cups chicken broth

Zest of 1 lemon

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Directions

Preheat Oven: Preheat your oven to 400°F (200°C).

Mix Meatball Ingredients: In a bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, red onion, garlic, oregano, cumin, salt, pepper, and egg. Mix until well combined.

Form Meatballs: Shape the mixture into meatballs, about 1 inch in size.

Cook Meatballs: Heat olive oil in an oven-safe skillet over medium heat. Brown the meatballs on all sides, then transfer the skillet to the oven and bake for about 15 minutes or until cooked through.

Cook Orzo: In a separate pot, cook the orzo according to package instructions, using chicken broth instead of water. Once cooked, stir in lemon zest and lemon juice.

Serve: Serve the meatballs on a bed of lemon orzo, garnish with fresh parsley, and enjoy this delicious Greek-inspired meal!
