Grape Juice Pie (ATK)

Ingredients

1 envelope plain gelatin

1/3 cup sugar

Pinch salt

1¼ cups boiling grape juice

½ teaspoon chopped lemon zest

2 tablespoons lemon juice

2 cups vanilla ice cream

1 baked 9-inch pie crust

Sweetened whipped cream

Chopped salted peanuts

Directions

INSTRUCTIONS: Dissolve gelatin, sugar, and salt in hot grape juice. Stir in lemon zest and juice, then pour over ice cream. Stir until smooth. Pour into pie crust and chill until set. Pipe whipped cream around pie edges and sprinkle with peanuts.

Notes

Molly says: My mom and her sister have competed through the years as to who makes the best grape juice pie. My aunt actually bakes a fresh grape filling, but it's my mom's version (which I think she got from the back of a grape juice bottle) that wins with my kids every time. Maybe it's the creamy ice cream filling or that nostalgic flavor combo of peanuts and jelly. I hope you enjoy!
