Cauliflower Salad

Ingredients

350g sweet potatoes, cubed

1 whole cauliflower, cut into small florets

570g chickpeas

Spices: 2 tsp cumin, 2 tsp ground coriander, chilli flakes, salt, pepper,

1 tbsp oil

150g Couscous

150g rocket

Dressing: 3 tbsp Greek yoghurt, juice from 1/2 lemon, 1 tsp honey, 3 cloves of garlic minced, salt and pepper

Directions

Preheat oven to 200c

In a roasting tray add your cauliflower, sweet potatoes, chickpeas, spices and oil. Mix well

Roast fit 35-40 minutes

Make couscous as per packet instructions

In a small bowl mix together the dressing ingredients

In a salad bowl add couscous, rocket, roasted vegetables. Pour dressing and mix well. Top with feta cheese (optional)
