Zucchini Slice Is One of My All-time Favourite Quick & Easy

3 eggs
1 large zucchini, grated & excess moisture drained (approx 300g)
1/2 brown onion, diced
100g ham, diced (or rindless bacon, can omit)
40g cheese, grated
80g self raising flour (can use GF flour)
Salt & pepper
Directions
Preheat oven to 170°C and line a baking tin.
Whisk eggs in a large bowl until combined then add the flour and whisk until smooth.
Add in remaining ingredients and stir to combine.
Pour mixture into the baking tray and bake for 30 mins or until golden & cooked through. Allow to cool before slicing.
