For the Dough
650g flour (5 cups)
350ml warm water (1.5 cups + 5 tablespoons)
15g salt (1 heaping teaspoon)
For the Filling
400g ground meat
1 large onion (grated and drained)
Black pepper, salt
For spreading the layers
230g butter
Preparation
Make a well in the center of the flour, add the water and salt, and knead the dough (the consistency may vary depending on the quality of the flour; you can add a little more water. The dough will be medium-firm). Cover the dough tightly and let it rest for 30 minutes. Divide the rested dough into 20 equal pieces. (Let it rest like this for 10 minutes) Roll out to the size of a serving plate and brush each layer with 1 tablespoon of melted butter. There will be 2 large pieces, 10 on top of each other. Flour each piece. Roll out the dough carefully, making sure it is not too thin or too thick, making it square. Shape the dough as shown in the video. Finally, brush the remaining butter on top. Bake in a preheated oven at 180 degrees Celsius with a fan until it turns golden brown.
Directions
Divide into balls and roll out. Brush each with melted butter and stack them into piles. Prove then roll out into a square. Cut into little squares and put a meat filling into each.. place on sheet pan. Prove then bake.
